Established in 1978 with the first location in Norman, Oklahoma, the Taco Mayo Restaurant chain has risen and fallen and risen again in terms of the number of locations. Today, there are only 50-plus restaurants in Oklahoma and its surrounding states; most of these restaurants are already franchised from the parent company, Taco Mayo Franchise Systems, Inc.
