Their Story: An absolutely beautiful biodynamic Vouvray made from 45 year old+ Chenin Blanc vines with indigenous yeast. Fresh apple, pear and spices on the nose. Very pure and focused in the mouth, offering juicy pit fruits, a hint of honeydew, and fresh citrus zest.
Florent Cosme has deep roots in Vouvray, with his family having been in the village for generations. Being the youngest sibling in the family, the vineyards originally owned by his grandmother, went to his older brother Mathieu. This small speed bump would not stop young Florent from pursuing his dream of making wine in his sacred home village. After finishing oenology school, he took a full-time position with famed Vouvray producer Vincent Careme as one of his key vineyard managers. In 2010, he quietly accrued some beautiful, old vine parcels along the Premiere Cote of Vouvray (the steepest and rockiest section of Vouvray – home to the best vines of the village). During nights and weekends, he would work his 4 ha of vines organically, eventually making his first vintage in 2011. Today he has committed himself full time to his small, but growing domaine. Only indigenous yeasts are used, never any malo, and the wines are aged in older 400L barrels. With his small domaine, Florent is part of a young and talented group of vignerons who have elevated this noble appellation through organic farming and non-interventionist winemaking.

Aged in Minnesota-made oak barrels for 18 months. Bødalen is named for an idyllic Norwegian valley on the edge of a massive glacier. And we took our sweet time selecting premium ingredients, meticulously milling the grain, working and fermenting the mash and most importantly, making well-considered, ruthless cuts at the condenser. All of our staple grains are cultivated exclusively for us on the Omlin Family farm in Quincy, Washington. The grains are mashed, distilled, and barreled in our Woodinville® distillery, then trucked back over the Cascade Mountains to our private barrel houses, where Central Washington’s extreme temperature cycles promote the extraction of natural flavors from the oak. Prior to being coopered, the barrel wood is seasoned in open air, rain, wind, sun, and snow for eighteen months, softening the wood’s harsh tannins. The barrels are then slowly toasted and heavily charred to further enrich the wood’s desirable flavors. Their Story: An absolutely beautiful biodynamic Vouvray made from 45 year old+ Chenin Blanc vines with indigenous yeast. Fresh apple, pear and spices on the nose. Very pure and focused in the mouth, offering juicy pit fruits, a hint of honeydew, and fresh citrus zest.
Florent Cosme has deep roots in Vouvray, with his family having been in the village for generations. Being the youngest sibling in the family, the vineyards originally owned by his grandmother, went to his older brother Mathieu. This small speed bump would not stop young Florent from pursuing his dream of making wine in his sacred home village. After finishing oenology school, he took a full-time position with famed Vouvray producer Vincent Careme as one of his key vineyard managers. In 2010, he quietly accrued some beautiful, old vine parcels along the Premiere Cote of Vouvray (the steepest and rockiest section of Vouvray – home to the best vines of the village). During nights and weekends, he would work his 4 ha of vines organically, eventually making his first vintage in 2011. Today he has committed himself full time to his small, but growing domaine. Only indigenous yeasts are used, never any malo, and the wines are aged in older 400L barrels. With his small domaine, Florent is part of a young and talented group of vignerons who have elevated this noble appellation through organic farming and non-interventionist winemaking.

Their Story: The name “Los Amantes” is inspired by the Aztec legend of the goddess Mayahuel who disobeyed her grandmother and gave herself to Quetzalcoatl for love. She paid with her life. After her remains were buried and watered with the tears of Quetzalcoatl, the maguey plant grew, which of course was then used to make mezcal. Los Amantes mezcal is distilled by hand and made 100% of agave Espadin in Tlacolula, Oaxaca. The agave is baked in traditional hornos, milled by tahona, and distilled in copper stills. Los Amantes distillery holds NOM-O01X, meaning that it was the first internationally certified mezcal distillery.
Los Amantes Joven is triple-distilled with agave Espadin. It has many of the same characteristics as a double-distilled mezcal, but its notes are expressed a bit more subtly. It has rich fruit tones and mild smoke that blends nicely with notes of citrus and roasted agave. Its finish is slightly metallic and herbaceous.

Their Story: "The Dudognon family, located in the Grande Champagne town of Lignieres- Sonneville, has produced Cognac since 1776. Their spirits are made from 100% old-vine Ugni Blanc grown on deep, chalky soils. The Nepèta project was born in Syracuse in 2017 from the will of Federico and Andrea. The two cousins decided to engage in the recovery of a Sicilian herb unknown to most through the production of an Amaro first and then of chocolate: the Nepitella. Nepitella (Calamintha Nepèta) is a perennial aromatic plant, similar to mint in aroma, which grows above five hundred meters of altitude on the rocky plateaus of the Iblei Mountains between Palazzolo Acreide and the Val di Noto. With its ovate leaves, its pink-violet flowers, and its fresh scent, this mint is the master of the wild Syracuse countryside. For the production of Amaro Nepèta, Federico and Andrea have decided to cultivate the Nepitella themselves, in certified organic fields, and follow the entire growth process of the plants up to the harvest.
