Farms: Finca la Florida, Finca San Antonio, Finca Los Claritos, Finca San Pedro
In the ‘90s on a small farm in the Sierra de Perijá near the Colombian border, cacao agronomist Humberto Reyes, discovered an old pure Criollo named after the Rio Guasare. The seeds traveled to the research centre, Campo Experimental San Juan de Lagunillas in the Andes to be grown & studied. Unlike typical Criollos, scientists found the plants to be very productive, blossoms in 2 years, big hardy fruit with plump white seeds in 3 years.
The cacao in this bar is from 4 farms grown interspersed with bananas & coffee near the town of Rosario, West of Lake Maracaibo. The trees originate from the Andean samples, the finished chocolate loaded with beautiful heritage Criollo flavours. Guasare is more than just cacao, it represents hope & a brighter future for a country presently enveloped in chaos.

Our friend Desmond - farmer, philosopher and madman (all the right traits for growing incredible cacao) - owns Bachelor Hall Estates, left to him by his grandfather. His 1,000 acre farm is fed by 2 natural fresh water springs is in a unique location in the valley between the spiritual & majestic Blue and John Crow mountains.
The cacao seedlings were originally transplanted from Trinidad in the 1800s growing naturally without any fertilizer. On our last visit, we hiked up to the highest point on the farm - the breathtaking beauty of the sea, forest, and mountains surrounded us in every direction.

"Tasting Notes: This bar is a dark chocolate lovers dream. Deep, rich and earthy with caramel and raisin notes. We discovered this fine flavor bean after meeting Giff Laube and Jose Enrique Herrera, the owners of Cacao Bisiesto, at their farm just outside the town of Matagalpa. The beans are named after the town in and around which they’re grown, which is located in Nicaragua’s Central Highlands.
The wet cacao beans (baba) are sent to Giff and Jose who then ferment and dry them at their centralized facility located on their farm, which allows them complete control over the entire flavor development process. Papua New Guinea is one of the earth’s wildest regions. Towns are no more than outposts, and the rules of the Wild West still predominate--roving bands and vigilante justice. Here too is one of the world’s hidden jewels when it comes to fine-quality cocoa. Very little cocoa from New Guinea makes it outside of Indonesia. Most is used for internal consumption. This chocolate is made from these very special beans. The flavors found in the chocolate made from cocoa grown in the wilds of the Morobe province have beautiful citrus notes most reminiscent of lime and red grapefruit. Beautiful earthy notes give balance throughout. As you eat this chocolate, the flavors hidden in the cocoa bean gently unwrap themselves in waves, which in turn create rolling waves of flavor--a flavor experience not to be missed.

I stumbled upon these magical beans some time ago. The moment I tasted these raw, unroasted bean from the southern most part of Papua New Guinea, I was overwhelmed by the bean’s intense flavor, as well as the large number of complex flavors all in this simple cocoa bean. The bean’s complexity and intense flavor also meant that it would be a difficult task to bring out all those flavors in a balanced and nuanced fashion.
I spent many late nights at the factory roasting the beans at different temperatures and for different lengths to understand how this bean responded to roasting. Similar testing went into conching and refining, since both the conching length and temperatures affect flavor, and the refining process affects how those flavors are expressed.
After an immense amount of testing, I found a path through the processes of roasting, refining, and conching that really brings out the intense flavors of these beans and reflects my vision of what makes these beans special. It is my desire that you enjoy the chocolate made from these magical cocoa beans as much as I do.

As the light came through the leaves, I could not help but feel that if there really was a Garden of Eden it would be just like this. Ever since I have wanted to make chocolate with beans from this magical place.

Product Details: We created this award winning chocolate exclusively with beans from the Guayas River flood-plain in Ecuador. Historically, these cocoa beans have been known as "Arriba" and have long been famous for their fine flavor. Arriba cocoa from Ecuador creates a chocolate that is rich and chocolatey but also very complex in flavor. Its flavor notes are floral and subtly berry notes. They are reminiscent of blackberry, spice and green banana. We created this bar using our hand restored antique machinery and our own touch of love. The Chocolate Maker's Notes:
Ecuador's native cocoa Nacional has been famous for centuries for its fine flavor. When cocoa traders would come to the port of Guayaquil and ask where the best cocoa was to be found, they would be pointed "Arriba" or up river. I was very happy to find a small group of cocoa plantations up river from Guayaquil that preserve pure Nacional cocoa. I used the cocoa from these plantations to make this beautiful and incredibly flavorful chocolate.
Finding absolutely pure Nacional can be a difficult task. Many cocoa farmers have been talked into replacing their Nacional with a hybrid called CCN-51. CCN-51 has no Ecuadorian genetic roots and is a particularly insidious hybrid that rapidly depletes the soil and is rapidly replacing fine flavored cocoa in the few countries that grow quality cocoa. By ensuring this chocolate is CCN-51 free, we are able to present to you the pure flavor of Ecuador's cocoa and heritage and help preserve fine flavored cocoa.
In addition to the final flavor of this special chocolate, what really makes me proud is that before we released this chocolate to the public or our retailers, I packed up a collection of bars and flew to Guayaquil and traveled up-river to the homes of farmers who grew the cocoa beans we used. There, along with my friends in Ecuador, we threw a party for the farmers with free food and drinks. We shared the chocolate with the very farmers who grew the cocoa. It touches my heart that the farmers were able to taste this chocolate first. It was a beautiful experience seeing the pride that they took in their farms, their trees, their cocoa. The faces of those humble farmers and their beautiful children will always be with me and I can only hope that this chocolate does honor and justice to their hard work and their love for their beautiful cocoa trees.

Before starting Amano, I experimented with an incredible number of flavor combinations. Chocolate with cardamom and black pepper was one of my favorite discoveries. This bar uses our award winning Dos Rios chocolate made from unusually flavorful cacao beans out of the Dominican Republic. Those beans have natural bergamot orange and lavender flavors to them. Blend and grind those beans with the finest cardamom and black pepper and the resulting flavor combination is electrifying. I've added crunchy bits to make it even more addictive.
My first successful chocolate bars that I gave away as Christmas presents including a cardamom and black pepper bar. It was because of those bars that made the recipients of those gifts convince me to start Amano Chocolate. You might say that with our Cardamom Black Pepper bar we have come full circle back to the origins of Amano Chocolate.

Castronovo Honduras Dark Milk 60% (62grs Bar)
This chocolate bar is a tribute to the Lost City of a vanished ancient civilization, discovered within Honduras' virgin tropical rainforest. The indigenous people living in the region protect the forest and make a sustainable living as harvesters of wild cacao. The cacao is processed in their village and put on hollowed-out tree log canoes, called pipantes, for a two-day voyage upstream to the nearest road. We are the first American craft chocolate maker to make a single-origin chocolate from these remote beans. We sprinkle fleur de sel from Guatemala onto this dark, rich, creamy milk chocolate. From the heart of the world ... A place where all of the Earth’s biomes are found from the Caribbean Sea to the rainforest to grassland to the glacial peaks of the Sierra Nevada de Santa Marta. A place where global change is closely monitored and kept in balance by its caretakers, the Arhuacos. They are descendants of the Tairona, an ancient civilization dating back to the 1st century AD. The Tairona grew cacao and prepared it as a drink. The Arhuacos today live a traditional village lifestyle led by their spirtual leaders, the Mamos. They make a livelihood from agriculture and hand-woven wool mochilas. Just recently, the Colombian government has given them back their spiritual land by the sea, allowing them to move back from the highlands where they were pushed by conflict. They found their ancestral cacao still intact. They recently started working on the harvest and fermenting of this cacao as a means to connect with their ancestors and deliver a message to the world to protect Mother Earth. With the recent onset of COVID19 and surge of natural disasters worldwide, this cacao has become increasingly rare as the Arhuacos take a respite from its harvest and focus their efforts on ceremony to bring the Earth back into balance.

We worked very carefully on this chocolate bar to deliver you something that is pure and properly balanced in flavor and experience to draw you back to being more connected with nature. The cacao is so remarkable that we found this balance with a very high percentage dark milk chocolate of 66%. The ancestral cacao has very low bitterness, a rich chocolate flavor with maltiness, soft fruit, and a nice crunch from the Arhuacos cacao nibs that add to its richness.
When Denise presented this chocolate to Mamo Camilo, he said, "This chocolate captures the essence of the Arhuaco ancestral cacao."
