4-pk (IPA) Our first hoppy flagship! Wavetable is a Northeast-style IPA. It boasts full spectrum hop aromas and layered flavors of mango, guava, cannabis, and citrus. We chose a blend of intense and punchy hops, spotlighting Strata, Mosaic, and Citra. Our goal for the beer is to optimize for juicy hop satisfaction and refreshing drinkability at the same time. 6.7% ABV

4-pk (vienna-style lager) 4-pk (vienna-style lager) We're thrilled to have our double decoction mashed Vienna-style lager back on the menu! With a base of German Vienna malt and a touch of CaraAroma, Cross Stitch is a malt-forward crusher. Aromas of freshly baked bread and subtle caramel are complemented by flavors of sweet malt and toffee, ending with a crisp, dry finish. 5.2% ABV Must be 21 or older to purchase.

4-pk (IPA) ⁣Magnetic Tape, a single IPA brewed with oats and Mosaic & Motueka hops, is all about big, fresh, and radiant tropical fruit character. Papaya, guava candy and watermelon rind dominate the nose and the flavor oozes with peach, melon and citrus zest. The finish is on the drier side making for a high drinkability quotient! 6.5% ABV

4-pk (farmhouse ale) Castling! This farmhouse ale is BELOVED in the Grimm household and we're so happy to have it back in the very picnic friendly 4-pk format. Brewed with complexly step mashed Pilsner malt and a generous whirlpool addition of noble hops, this is pure old world elegance. Quenching with notes of hay, pepper, and candied citrus. 5.5% ABV

4-pk (West coast-style IPA) Classic Rewind is brewed in homage to old-school hoppy classics like Pliny The Elder, in that dank paleolithic era before Northeast haze took over the world. With multiple boil additions of hops, a whirlpool hop burst, and two dry hop additions of Columbus, Simcoe, and Centennial, Classic Rewind shows off a refreshing bitterness laden with layers of delicious resinous classic hops. 7.2% ABV

4-pk (triple IPA) As the name implies, this TIPA is a big beer! Hopped with Mosaic, Simcoe, Citra and Galaxy, Zonk delivers powerful notes of cantaloupe, honeydew, and pink starburst. Juicy, sticky & full-bodied with a balancing bitter finish. 10% ABV

4-pk (dunkelweizen) Grimm Weisse Dunkel is finally here! The cold- sibling to our award-winning double-decocted, can-conditioned hefeweizen is the perfect cool weather beer. Notes of dried fruits, banana, clove, and chocolate, with a wheaty-tart refreshing finish. This underlooked style is perfect for the season, and we're delighted to finally make fresh, world-class dunkelweizen available in NYC. 5.5% ABV

4-pk (dry-hopped kettle sour) Psychokinesis is exceptionally crushable. Mosaic & El Dorado hops lend bright, balanced flavors fresh tropical fruit and dank forest while our no-boil process contributes a punch of raw sourdough tartness. A perfect beer for celebrating the last stretch of summer! 5.3% ABV

4-pk (NYS cream ale) A nod to the hometown hero that is Genesee Cream Ale, we couldn't think of a better style to showcase all NYS ingredients. This lawnmower beer is made with barley, corn and oat from NY Craft Malt and hops from Chimney Bluffs. The result is crisp, smooth and crushable--a true respite from the decadent days of the holiday season. 5% ABV

500ml (blended barrel-aged sour w/ merlot grapes) We conclude our 2020 harvest season with Gathering Merlot, a blended barrel-aged sour with merlot grapes sourced from Viviano Vineyards in Long Island. Using carbonic maceration — a historical wine-making technique associated with wines from Beaujolais and Rioja — we fermented whole, intact clusters of merlot grapes in our oak foeder before blending with barrels of some of our finest aged beer. The result is a lush, fruit-forward sour ale--big, juicy flavor with a rounded acidity and soft tannic finish. 7% ABV

4-pk (Dry-hopped sour brewed with apricot and conditioned with white oak) This dry-hopped kettle sour--brewed with apricot and conditioned on white oak--is a crushable delight. Inviting aromas of tangy stone fruit nectar mingle with juice bomb hops (Mosaic & El Dorado). Intense apricot on the palate with soft, inviting acidity and subtle tannic undertones from the oak spirals. 4.6% ABV. Must be 21 to purchase.

500ml Bottle (imperial stout) This award-winning 10% Imperial Stout pours jet black with burnt orange highlights. A long lasting tan head leaves abundant frothy lacing. Aromas bursting from the glass include coffee, bitter chocolate, caramel, black currant and blueberry. Creamy and viscous on the palate with a pop of smooth bitterness accompanied by a lingering roasty finish. 10%ABV

4-pk (doppelbock lager) This double decoction-mashed Doppelbock lager delivers deep and delectable layers of malt-driven sweetness and roast. Notes of molasses, toasted bread, warm baking spices, dark caramel and raisin are present from aroma through to the long, lingering finish. The body is on the lighter side making this a most quaffable elixir. 7.5% ABV

4-pk (imperial milk stout w/ cocoa, vanilla & salt) We first brewed this chocolate babka-inspired imperial milk stout in 2018 in collaboration with Mekelburg's to celebrate the opening of their new Williamsburg location and we are delighted to have it in our company once again! Rich with cocoa, infused with vanilla and finished with just the right amount of salt, Sumi Babka is a densely flavored, full bodied treat--a true celebration of the "better" babka. 12% ABV

500ml (spontaneous ale w/ coriander & sea salt) A gueuze/gose mash-up of sorts, Supernature is a blend of one and two year-old casks of spontaneous ale conditioned on coriander seed and Maldon sea salt — incidentally, Grimm’s first “traditional” gose in terms of flavorings! Supernature highlights the complexity of our spontaneous barrel stock through a gently spiced lens. A bright acidity is tempered by notes of apricot, pineapple, umami-flecked aged hop funk, and earthy, leathery brett. Restrained salinity makes the mouth water and beckons another sip! 6% ABV

500ml (spontaneously-fermented dark ale) This dark, spontaneous beer is a cousin of Lambic. Inoculated by the nighttime air and ripened for 2 years in oak, it is tart, wine-like, and fruity. A small blend from 4 select oak casks. The Duivelsbier style was popular in the 1800’s and produced in the city of Halle in Belgium’s lambic country. The very last producer of the style, Van Der Linden, vanished 20 years ago. This may very well be the only beer of its kind in the world today! 6% ABV

500ml (foeder-fermented spelt saison w/ jasmine flowers & grapefruit zest) A refined spelt saison aged in our oak foeder for two months, then finished on jasmine flowers and grapefruit zest. For this beer, we used a decoction mash with a ferulic acid rest, spelt malt, and a dash of aged hops to set the table for complex and beautiful brett expression! We pitched no additional microbes besides our house saison yeast, but the resident yeast and bacteria in our wild oak foeder slowly made themselves known with light acidity and complex spice. A final addition of tasteful botanicals makes this enchanted elixir irresistible. 6% ABV

500ml (spontaneously fermented ale w local cherries) The Open Work: Kriek is made with 100% New York-grown ingredients. With Balaton sour cherries from Samascott Orchards, barley and raw wheat from New York Craft Malt, our own house-aged hops and our local ambient microflora, this gently tart and complex spontaneous ale shows the best of our local terroir. Soft acidity, leathery brettanomyces, complex spice, and juicy tart cherries make for an American spontaneous ale that is as elegant as it is vivid. 6% ABV

500ml (blended barrel-aged sour w/ local fruit) Gathering Blueberries and Blackberries began with a carbonic maceration of 600 pounds of berries from Pastore Orchards in Hammonton, NJ. This made a delectable berry wine that we enjoyed on its own before selecting and adding a blend of barrel-aged stock: roughly 50% year-old golden sour base and 50% year-old barrel-aged brett beer. Pouring a beautiful red-purple hue, Gathering B&B has a vivid, jammy fruit character. Tannic blueberry skins are balanced with a bright fruit acidity, resulting in complex drinkability. 6% ABV

500ml (blended barrel-aged sour w/ local fruit) Gathering Stone Fruit began as a melange of carbonically macerated fresh ripe local fruits: Baby Gold peaches, Hargrand apricots, and red plums. These fruits came from Bittner Singer Orchards in Appleton, NY. To this maceration, we added a blend of mixed culture golden sour barrels and barrel-aged saison. The stone fruits bring a range of big juicy flavors and contribute a bright acidity.6% ABV

500ml (blended barrel-aged sour w/ local fruit) Gathering Blueberries, Red Currants, and Nectarines is a highlight of this year's Gathering crop. Pouring a luminous magenta, this beer features hyperreal, vivid aromas of currants, berries, and juicy stone fruit. On the palate it is complex with a perfect balance of soft acids from fruits and fermentation, bretty notes of spicy funk, and light accents of oak. Sublime! These fruits came to us whole, ripe, and fresh from Samascott Orchards, Tousey Farms, and Bittner-Singer Orchards respectively. 6% ABV

500ml (blended barrel-aged sour w/ local fruit) Gathering Merlot is extremely special to us—we started this beer one year ago with a whole-cluster fermentation of Merlot grapes from our friend, and Staten Island Ferry Captain, John Viviano's vineyard on Long Island. We blended 1 year-old sour beer with the grapes and then let it rest in the bottle for an additional year! Time has been VERY good to this beer, and unexpected esters of passionfruit have developed alongside the expected plummy, jammy merlot flavors. 6% ABV

500ml (blended oak-aged saison, collab w/ Strangebird) In celebration of our breweries sharing 2022 New York State Brewery of the Year honors, we present this tasteful blend of oak-aged saison ales, blended from both of our respective barrel libraries.#1 Record is soft and satisfying, with rounded notes of fresh nectarine and sweet sesame cracker giving way to an unmistakably oaky tartness. Its ultra-clean finish invites repeat plays. 7%

500ml (spritzy saison) Beginning with pomace from the redcurrants, nectarines, and blueberries used in one of our Gathering beers, we then added 600 lbs of Long Island-grown sauvignon blanc white grapes for a semi-carbonic maceration. After one week of maceration we blended in an assortment of barrel aged saisons from our oak vault, followed by a touch of de-aerated water to bring the whole thing down to a crispy 4% ABV. The result is our most crushable wild beer of the year: a layered nose of stone fruit, white wine, and Belgian yeast esters gives way to an ultra clean and light sip, with a hint of tartness and a dry, gently tannic finish. 4% ABV

500ml (barleywine aged in cognac barrels) This sumptuous barleywine is based around deeply caramelized, long-boiled Maris Otter malt and East Kent Goldings hops. Using a partigyle mash to take only the strongest runnings for this beer, we hit a whopping 32 plato in the boil. Time (1 yr) spent in cognac barrels added velvety layers of smooth booze to the existing complex notes of dried fig, date, and plum. 11%

Tum Tum Tree 500ml (digestif-style sour ale) Brewed in collaboration with Blue Hill at Stone Barn this is a blend of spontaneous and dark sour ales conditioned on spicebush berries and fig leaves—pours a glowing red-amber and is richly spicy on the nose. 6%

Jub Jub Bird 500ml (aperitif-style sour ale) Brewed in collaboration with Blue Hill at Stone Barns, this is a bright yellow spontaneous ale refermented on paw paws, marigold flowers, fig leaves, and hardy kiwis. 6%

Open Work Riesling 2022 (500 ml) Spontaneous Sour Ale with Riesling grapes We blended choice barrels of our complex, tart, and spicy 2-year spontaneous ale onto perfect whole-cluster macerated Riesling grapes. 7% ABV

4-pk (imperial milk stout w/ cinnamon, cocoa, vanilla & salt) innamon takes a backseat to no babka! To pay homage to the second sibling of Mekelburgs babka, we added warming cinnamon to the Babka base beer, resulting in a distinctly spiced aroma and velvety smooth sip. 12% ABV

4pk (oatmeal porter) Rich oatmeal porter infused with Madagascar vanilla beans. We used oats three ways in the brewing process (malted oats, flaked oats, and golden naked oats) to lend a silky mouthfeel. The vanilla is notable and yet this porter is eminently drinkable — rich and soft without tipping over into being too sweet.

J'Adoube (500ml) barrel aged saison After blending select casks of barrel-aged saison, we racked J’Adoube onto second-use local Balaton cherries that saw first life in The Open Work Kriek. Soft and complex, J’Adoube has been conditioning in the bottle since September, developing additional depth and acidity thanks to residual microbes from spontaneous fermentation. A cherry-forward and satisfyingly wild saison! 6% ABV

Intaglio (500 ml) a barrel-aged sour ale, conditioned on second-use stone fruit with Madagascar vanilla beans and Citra hops. A collab with Sapwood Cellars Brewery in MD. 6% ABV

Canopy Door (4pack) DIPA Spotlighting the extremely rare and highly sought after Australian Enigma hop, sister to Galaxy. With our dry-hopping elixir of Enigma, El Dorado, Simcoe, and Citra, we’ve coaxed flavors of berries, stone fruit, and tropical delights— raspberry, peach, strawberry, grape, mango, nectarine, and melon. 8%

Ice Cap (4 pack) cold ipa The use of cold-fermenting yeast alongside a generous dry hop of Simcoe and Vic Secret results in more pure hop character of pine and peach, as opposed to the tropical notes produced by yeast transformation that take center stage in our hazy IPAs. 7.1%

4-pack (Session IPA) Omega Tribe! Our newest session IPA is a zippy, refreshing ride. Hopped with Southern Hemisphere hops Nelson Sauvin and Vic Secret — alongside Citra — Omega Tribe presents with aromas of gooseberry, white grape, and lime pith. Fruity and light on the palate, with a crisp, dry finish. 4.5%

Café Brûlot (500 ml bottle) Inspired by the flaming New Orleans cocktail bearing the same name. Our version of Café Brûlot Diabolique is a blend of rich, barrel-aged imperial stout featuring Taconic whiskey and brown sugar rum barrels and steeped on orange zest, coffee, cloves, and cinnamon. 10.5%

DIPA (4 pack) The 10th iteration of this 100% New Zealand hop DIPA -- this time spotlighting Nectaron, Nelson Sauvin & Riwaka -- is soft, juicy and overflowing with luscious aromatics and flavors. Intensely bright notes of persimmon and purple fruit meld beautifully with more delicate notes of white grape and complex spice. 8% ABV

IPA (4 pack) A refreshing new single-hop IPA highlighting one of our favorite varieties, Strata hops, and lots of it! Showing off its characteristic notes of strawberry, passionfruit, sage, and dank cannabis. 6.4%

Spiced Saison Ale (4 pack) Our Candlepower saison is a small tribute to Dany Prignon of Brasserie Fantôme way of brewing. Each year’s version is a little different from those that came before. Candlepower 2023 is an exceptionally crisp, pale, and delicate quencher with an intoxicatingly complex herbal/spicy nose from sage, orange peel and coriander. 6.6% ABV
