We conclude our 2020 harvest season with Gathering Merlot, a blended barrel-aged sour with merlot grapes sourced from Viviano Vineyards in Long Island. Using carbonic maceration — a historical wine-making technique associated with wines from Beaujolais and Rioja — we fermented whole, intact clusters of merlot grapes in our oak foeder before blending with barrels of some of our finest aged beer. The result is a lush, fruit-forward sour ale--big, juicy flavor with a rounded acidity and soft tannic finish. 7% ABV

Supernature highlights the complexity of our spontaneous barrel stock through a gently spiced lens. A bright acidity is tempered by notes of apricot, pineapple, umami-flecked aged hop funk, and earthy, leathery brett. Restrained salinity makes the mouth water and beckons another sip! 6% ABV

This dark, spontaneous beer is a cousin of Lambic. Inoculated by the nighttime air and ripened for 2 years in oak, it is tart, wine-like, and fruity. A small blend from 4 select oak casks. The Duivelsbier style was popular in the 1800’s and produced in the city of Halle in Belgium’s lambic country. The very last producer of the style, Van Der Linden, vanished 20 years ago. This may very well be the only beer of its kind in the world today! 6% ABV

A refined spelt saison aged in our oak foeder for two months, then finished on jasmine flowers and grapefruit zest. For this beer, we used a decoction mash with a ferulic acid rest, spelt malt, and a dash of aged hops to set the table for complex and beautiful brett expression! We pitched no additional microbes besides our house saison yeast, but the resident yeast and bacteria in our wild oak foeder slowly made themselves known with light acidity and complex spice. A final addition of tasteful botanicals makes this enchanted elixir irresistible. 6% ABV

With Balaton sour cherries from Samascott Orchards, barley and raw wheat from New York Craft Malt, our own house-aged hops and our local ambient microflora, this gently tart and complex spontaneous ale shows the best of our local terroir. Soft acidity, leathery brettanomyces, complex spice, and juicy tart cherries make for an American spontaneous ale that is as elegant as it is vivid. 6% ABV

Gathering Blueberries and Blackberries began with a carbonic maceration of 600 pounds of berries from Pastore Orchards in Hammonton, NJ. This made a delectable berry wine that we enjoyed on its own before selecting and adding a blend of barrel-aged stock: roughly 50% year-old golden sour base and 50% year-old barrel-aged brett beer. Pouring a beautiful red-purple hue, Gathering B&B has a vivid, jammy fruit character. Tannic blueberry skins are balanced with a bright fruit acidity, resulting in complex drinkability. 6% ABV

Gathering Stone Fruit began as a melange of carbonically macerated fresh ripe local fruits: Baby Gold peaches, Hargrand apricots, and red plums. These fruits came from Bittner Singer Orchards in Appleton, NY. To this maceration, we added a blend of mixed culture golden sour barrels and barrel-aged saison. The stone fruits bring a range of big juicy flavors and contribute a bright acidity.6% ABV

Gathering Blueberries, Red Currants, and Nectarines is a highlight of this year's Gathering crop. Pouring a luminous magenta, this beer features hyperreal, vivid aromas of currants, berries, and juicy stone fruit. On the palate it is complex with a perfect balance of soft acids from fruits and fermentation, bretty notes of spicy funk, and light accents of oak. Sublime! These fruits came to us whole, ripe, and fresh from Samascott Orchards, Tousey Farms, and Bittner-Singer Orchards respectively. 6% ABV

Gathering Merlot is extremely special to us—we started this beer one year ago with a whole-cluster fermentation of Merlot grapes from our friend, and Staten Island Ferry Captain, John Viviano's vineyard on Long Island. We blended 1 year-old sour beer with the grapes and then let it rest in the bottle for an additional year! Time has been VERY good to this beer, and unexpected esters of passionfruit have developed alongside the expected plummy, jammy merlot flavors. 6% ABV

Saison Spritz: Brooklyn

Beginning with pomace from the redcurrants, nectarines, and blueberries used in one of our Gathering beers, we then added 600 lbs of Long Island-grown sauvignon blanc white grapes for a semi-carbonic maceration. After one week of maceration we blended in an assortment of barrel aged saisons from our oak vault, followed by a touch of de-aerated water to bring the whole thing down to a crispy 4% ABV. The result is our most crushable wild beer of the year: a layered nose of stone fruit, white wine, and Belgian yeast esters gives way to an ultra clean and light sip, with a hint of tartness and a dry, gently tannic finish. 4% ABV

This sumptuous barleywine is based around deeply caramelized, long-boiled Maris Otter malt and East Kent Goldings hops. Using a partigyle mash to take only the strongest runnings for this beer, we hit a whopping 32 plato in the boil. Time (1 yr) spent in cognac barrels added velvety layers of smooth booze to the existing complex notes of dried fig, date, and plum. 11%
