Introducing our newest dark chocolate bar - Tingo Maria! Ucayali River Cacao sources from several areas in the Peruvian state of Ucayali. Having won numerous awards for our Private Reserve Ucayali bar, we wanted to explore some of the other fantastic cacao in the region which URC also ferments.
Tingo María is a city on the Huallaga River in central Peru, set between Andean highlands and Amazonian jungle. It's the gateway to the biodiverse Tingo María National Park, known for Sleeping Beauty, a mountain shaped like a reclining woman.

Back in 2014, we became obsessed with Desmond Jadusingh’s Bachelor’s Hall cacao after tasting what David considered the best chocolate he’d ever had in his life. David decided to wait until he was "good enough" to work with this extremely delicate and nuanced cacao.
Five years later, David finally got his wish - we air-freighted in the cacao from Desmond in Jamaica and began carefully working with it. Hacienda Azul is a small farm located in the rural town of Turrialba in the province of Cartago a couple hours east of Costa Rica’s capital, San Jose. It is managed by the Zeuner family and employs 8 people full time. The famed CATIE university of agriculture is also located here and has provided 5 different clones to the farm. The beans are washed prior to drying and we’ve found this cacao fascinating by its versatility.

Approximately a ten hour drive from Tanzania's main city of Dar es Salaam, Kokoa Kamili is based in the village of Mbingu (Kiswahili for Heaven) in the Kilombero Valley area of the Morogoro region bordering the Udzungwa Mountain National Park. Mbingu is fairly rural with no access to electricity or tarred roads for about sixty kilometers.
Kokoa Kamili pays premiums to farmers in the region who grow quality cacao to encourage them to seek quality over quantity.

We've loved exploring the depths of Venezuelan cacao for years, and are excited to finally bring you our very first production bar from the Patanemo region!
Originally founded by runaway slaves, the village of Patanemo in Venezuela is derived from "paz tenemos" which means "we have peace." The trees grow at high elevation on a steep incline, unusual for cacao which normally grows in dense canopy in valleys. Patanemo particularly stands out for its complex yet familiar chocolatey flavor. Exported by Tisano Cacao, whose dedication to quality and the farmers is as strong as ours.

The first and only São Tomé bar made in North America - we had to air freight it in.
São Tomé and Príncipe is located on the western equatorial coast of Africa. The former Portuguese colony, the country has a terrible cast of slavery. Now one of the most stable democracies in Africa, São Tomé has some of the most unique soil and climate conditions for cacao, but remains extremely poor.
Satocao was established in 2015 as a certified organic co-op of over 400 farmers from seven communities. We were able to secure a very small amount of the very best beans we sampled to create a unique blend for this limited edition!

Late one night in the summer of 2015, we roasted a test batch from the first-ever harvest of Ucayali River Cacao. These beans came from a region of Peru not normally associated with great cacao. But here we knew we had something special, thanks to the exacting standards of award-winning cacao expert Daniel O’Doherty. Ucayali River Cacao pays farmers a premium for their best work, and the level of dedication and care in the processing has been unlike any we have ever seen. We have strived to bring that same level of care to this bar.
We’re proud to bring back this most unique and interesting chocolate; one that must be savored and enjoyed with quiet contemplation.

Tranquilidad is wild-harvested cacao from Bolivia and fermented by world-renowned cacao expert Volker Lehmann. The Heirloom Cacao Preservation Fund had these beans genetically tested by the USDA and it's been verified 97.3% Boliviano, also known as Beniano cacao. You've heard of Criollo, Nacional, Porcelana? Beniano is in a class all it's own.
For the first time, we're releasing a bar that required not only new packaging, but a new mold. Our first custom mold since we started nearly six years ago, with the incredibly detail-oriented team at Micelli in New York.
