2018 Byington Sparkling Rosé of Pinot Noir
You're in for a treat with our Sparkling Rosé made from our Estate-grown Pinot. It starts with our early-harvested Pinot grapes to create the rosé. We then add Pinot port, which includes our Pinot-based brandy for the dosage, adding a whisper of sweetness to this dry sparkling wine. Crafted by Method Champenoise, and given extended time on the lees, a flurry of tiny bubbles carry flavors of cherry, strawberry, and peach into a creamy finish. Enjoy this festive wine with a variety of cuisine. A perfect pairing for any celebration!

Blanc de Blancs is a Sparkling Wine from 100% Chardonnay, including dosage, and is crafted by Methode Champenoise. 2016 Byington Liage Sauvignon Blanc
This Byington favorite is a lively blend. Offering lime and grassy flavors from 80% Sauvignon Blanc grown in Monterey County, and is softened by honeysuckle and orange blossom notes from 20% Viognier grown in Amador County. The stainless steel tank fermentation creates a crisp style wine with a big bright presence. Enjoy with lightly sauced shellfish or white meat on a hot summer day.

2017 Byington Chardonnay Estate
Tin Cross Vineyard grows 2000 feet above Alexander Valley and produces Chardonnays of tremendous character. Our 2017 vintage was harvested at 25 Brix in early September, allowing the fruit to ripen with beautiful sugar and acidity. The wine was 100% stainless steel fermented, and brought through full malolactic fermentation. There is sweet Meyer lemon and hay aromatics on the nose, kiwi and honeysuckle flavors on the palate, and a rich satisfying finish. Vivino: 4.0/5 stars

This Merlot comes from our ultra premium vineyard in Alexander Valley (Sonoma). In fact... it comes from a SUB AVA (American Viticultural Area) of Alexander Valley. The 2015 vintage produced a particularly low yield and small berries for this 100% Merlot from the Sofia Block of our Tin Cross Vineyard - and we couldn’t be happier. These conditions resulted in bold tannin structure and highly concentrated flavors including plum, dried herbs, and vanilla. Aged 22 months in American Oak. Enjoy now, or cellar up to 8 years for added complexity. Our Merlot is an incredible value. Make this your any-day-of-the-week drinking wine.

We make exceptional Pinot Noir. This Pinot Noir has been reserved from the rest of our Byington Estate vineyard due to the distinct individual character and westward facing location of Block 4. The terroir creates fruit that is earthy and robust, adding body and elegance to this Santa Cruz Mountains wine. It has dark cherry fruit on the nose with a lingering finish on the palate. Fermentation and maturation in 100% French oak for 14 months enhanced its flavor and complexity. Enjoy now or age 4 to 6 years. Vivino: 4.0/5 stars
