Cabernet Sauvignon 2018
Cabernet Sauvignon is one of the most widely recognized wine grapes in the world. Its popularity among growers is due in large part to its ability to thrive in a variety of climates. The sunny and refreshing Washington weather and characteristic volcanic and stony soil are especially ideal to produce grapes that lead into complex and elegant Cabernet Sauvignon wines. To achieve more finesse in the final blend, we used 20% of Merlot from the same growing area. This also contributed to balance the tannins and gave fruitiness to the wine. This 2018 vintage is one of our favorites Cabernet Sauvignon.

Norton-Chambourcin
Norton is among only a few grapes native to North America. Norton is also a common grape grown here in the Midwest due to its ability to adapt to a variety of weather conditions, its durability, and its resistance to disease. Chambourcin, a French-American hybrid variety, is winter hardy and typically produces wines that are rich in color and juice acidity on the palate, but lighter in body and less robust than the average red varieties. Blending both ‘Illinoisan’ varieties and adding the finesse of a long aging in American oak barrels, we were able to highlight the unique characteristics of the Midwest wine grape growing region.

Chardonnay 2020
Fermented and aged in French oak, we preserved the fruitiness and freshness of the variety by doing just a short oak aging for three months. During these three months we made batonnages twice a month. Bâtonnage is the process of stirring the fine lees remaining in the unfinished wine to give it a creamier texture. The results are a very well-balanced Chardonnay with a sweet, creamy taste, and refreshing fruitiness. This is the kind of Chardonnay that wine lovers are looking for!

These long hot days in summer, followed by cool nights, ensure a long growing season, and peak phenol and flavor balance in the grapes grown there. Sparkling Peach
To produce this delicious wine we used whole, fresh, Red Haven Peaches grown in Michigan. This dark red and golden variety is well known as a dessert peach, and also to be one of the top choices for bakers due to its exceptional flavor. A clean and slow fermentation in stainless steel tanks, at 55 degrees, produced a crisp and refreshing base wine. The second fermentation, where the bubbles were produced, was made through Charmat Method, allowing the development of a beautiful perlage and elegance secondary flavors.

Ice Wine 2020
Michigan’s weather conditions during the grape growing season 2020 were exceptional for making ice wine. Early cold temperatures were ideal to freeze the healthy and ripe Vidal Blanc grapes. The grapes were quickly harvested while still the berries were frozen, and we were able to make this aromatic and special wine after many years of waiting (The last ice wine we produced was in 2013!). Enjoy this amazing dessert wine with hearty cheeses or on its own.
