Ginseng White Tea Chai
Ingredients: Organic White Tea Leaves with Organic freshly-ground and hand-blended Ginger, Cardamom, Fennel, Cinnamon, Peppercorn, Clove, Star Anise, Ginseng and Cumin. We introduced our Chai during the month of April of 2015. Since then we have noticed its spike of interest with our friends and customers. Our Ginseng Chai is made up of eight individual 100% organic spices collected from only trusted companies because of their quality, our organic White Tea Leaves, and organic powdered Ginseng root. The eight spices and ginseng are nutritious and warming for the body, but also add another layer of flavor complexity when paired with the white tea leaves. The package contains ten bags of tea, which can be brewed three to four times on average, yielding approximately thirty to forty cups of tea per package.

Special Reserve Green Tea
Ingredients: 100% Wild-Harvested Green Tea Leaves. This Special Reserve Green Tea is wild-harvested from an abandoned tea farm in Dehua County, Fujian Province, near the farm of Shang's friend. Known for its especially rich ecosystem, Dehua County is also the same area that yields the porcelain used in our porcelain teaware. Harvested from the elegant Mei Zhan cultivar, which is normally used to make the Oriental Beauty Oolong Tea, Shang applied our green tea processing style with an outstanding result. This green tea is crisp, refreshing, and smooth-bodied with a vegetal quality and buttery undertone. What really sets our Special Reserve Green Tea apart from other green teas is its clean finish and lingering sweetness with no bitterness or astringency. Aroma of parsley and cut grass. Opulent green kale flavor with Meyer lemon high note. Buttery mouthfeel.

Aged Wu-Long White Tea
Ingredients: 100% Organic White Tea Leaves. This tea is sourced and produced at the crown tip of the TaiMu mountain in South Fujian. From early September, sturdy late-harvest white tea leaves are plucked for the wu-long tea. By this time in the season, the tea plants have what is called “autumn golden sun energy”. They have enjoyed spring and summer rains, bright sunshine, mist and mountain dew, and the large leaves possess a rich and mature aroma. Teas from this harvest season are referred to as having Gao Xiang, or “High Fragrance”. Immediately after being harvested, the leaves are spread on a cloth to wither for a few hours. When they become soft enough, they are rolled and placed in a cloth-lined bamboo basket. These baskets are placed on shelves lining the walls of a small room, at the center of which is a charcoal stove and a pot of simmering mountain spring water. This arrangement maintains a hot and humid environment in which the buds can oxidize and ferment for a few hours. During this time, the tea is periodically sampled to observe the color and flavor change, as the day’s weather may affect the pace of the process. Once the tea has reached about 40% oxidation, it is removed and shaken in order to cool. We let the tea leaves rest and oxidize for 18 months, after which time the leaves are compressed into tea cakes. We broke up the tea cakes into 15 gram and 2 ounce (57 gram) increments to make the tea easier to enjoy.

Aged White Tea
Ingredients: 100% Organic White Tea Leaves. For this tea, we started by aging our White Peony King White Tea for at least 18 months. At the end of that time, the leaves were steamed to make them pliable and then pressed into brick-shaped molds. These bricks were then stored at about 35-60% humidity to slowly ferment the tea leaves. Over the years that these bricks of tea have been aging, they have developed a rich, woodsy, and naturally sweet quality to them with a smooth finish. We broke up the tea bricks into 15 grams and 2-ounce increments to make the tea easier to enjoy.
